Since we ended up with a huge whole turkey for just the two of us, we have had a lot of turkey since Thursday. I finally rounded up the last of the turkey and threw together this very easy pot pie which would work for chicken as well.
Turkey Pot Pie
2.5-3 cups turkey, shredded
1 onion, finely chopped
4 celery stalks, finely chopped
3-4 carrots, finely chopped
1/4-1/2 cup peas
butter
1/2 cup flour
2 cups turkey/chicken/vegetable stock or broth
puff pastry (I bought the frozen kind!)
salt, pepper and seasonings
Melt around 30-40 grams of butter over low heat. Add onion, celery and carrots. Saute until slightly tender, about 7 minutes. Add flour and quickly stir to combine the butter with the flour. Add stock and turkey, stirring constantly. Increase the heat, add the peas and allow the mixture to thicken. If it thickens too much, thin with a bit of water. Add salt, pepper and any other spices (I used paprika and thyme), tasting to ensure it's adequately spiced. Pour mixture into a casserole or pie dish and top with puff pastry. Slice a few vents and bake in 350F oven until pastry is golden.
