Homemade mac & cheese is really as simple as 1,2,3 (well 4,5,6!).
Mac & Cheese
1. Cook & drain pasta
2. Melt butter in same saucepan over low
3. Add flour to make roux
4. Pour in milk & add cheese (if it is too thick add more milk, too thin more cheese)
5. Stir until melted
6. Add pasta back to saucepan and stir to combine.
For the above picture I had about 2 cups of cooked pasta and used 25 grams of butter, 1 small tablespoon of flour, about 1/4 cup milk, a sprinkling of shredded Cathedral cheese and 2 slices of Monterey Jack cheese. You honestly can't go wrong so don't worry so much about measurements!
My favourite way to make a mac & cheese meal? Toss in some cooked broccoli and chicken breast. Yum!

That looks so yummy....now I´m craving mac and cheese! Haven´t had any in ages, either. Hope the comfort food is helping.
